Love is in the air!

I could not get out of the bed this morning without a good reason, and lucky for me I had one. Last night I fell asleep with Hisako Ogita's I Love Macarons Book and I had such sweet dreams I woke up with the book still open in the bed, and a book spine indent on my face.

The flavour of the macarons is almond-vanilla. I added some almond oil to the cookie, and used my favourite vanilla buttercream recipe in the middle.

So, with the buttercream out and ready to used up, I just couldn't help myself...A couple of cupcakes never hurt anyone right?

Cupcakes and more Cupcakes

I actually had a bad dream about cupcakes last night. I also had a terrible incident on the subway yesterday so I think all my dreams were terrible because of it. I also watched this movie called "I've loved you for so long" and it deeply saddened me. Urhg. . I can't talk about it on my blog. Its just too lovely on here. I think I need a break from cupcakes though. Its summer. Time for ice cream and sorbets. Is is Sherbet or Sorbet?

These are cupcakes I made for someone's wedding...a combination of vanilla and chocolate cupcakes, with vanilla and chocolate icing. One is white choco buttercream, and the other is whipped ganache. I also made those cherry blossoms with gum paste. First try with gum paste, but I think it turned out ok. Next time I should keep the gum paste covered so that it does not crack.Either way, the cupcake were probably the most enjoyed by Jenn's friend Enid, for her 5th birthday. Don't worry Enid, next year I will get you a bag of silver balls for your birthday!

Thanks Jenn for the lovely photos!

happy mother's day!

Lavender Cupcakes
I actually found this recipe online, and although the flavour was good, the cupcakes were super dry. I soaked them with rosewater simple syrup before icing them, and also added 1 lemon zest to the recipe, just after the eggs.

180 ml milk
3 T organic lavender flowers
85 g butter, at room temp
200 g white sugar (i used vanilla sugar)
2 eggs
250 g self raising flour
i omitted the salt which is already in the self raising flour
zest from 1 lemon

1. Preheat the over to 325 F, line 12 x 6 cupcake trays with cupcake papers.
2. Combine the milk and the lavender, rubbed in your hangs to release the oils in a saucepot over medium heat. Bring to a boil, remove from heat, and cool slightly.
3. Cream the butter and sugar until fluffy, incorporate the eggs, one at a time and beat until fluffy and light.
4. Add the flour and the milk alternatively to the egg mixture, ending with flour. Use a gentle folding method and do not overmix.
5. Pour into the cupcake shells, just over halfway. I used a piping bag to keep it clean.
6. Bake 10 mins, the rotate and bake another 10 mins about, until a skewer inserted comes out clean.

Jacey and Ryan's Wedding Cake

Photo thanks to: Steve Brooks Photography
Jacey and Ryan love chocolate, so I made 3 tiers of chocolate cake: the bottom tier with chocolate cake and chocolate mousse and raspberry jelly, the middle tier with chocolate cake, white chocolate buttercream, and sour cherries, and the top tier with chocolate cake, and mocha mousse. The whole cake is covered in buttercream...and also I made the letters with fondant. I also included the baby cupcakes with gold foils, to mach the gold cake board and lettering.
